The Colomba Opera Waiting is handcrafted according to tradition.
A lot of attention is paid to the technical research of the product, using live sourdough, the only element that helps conservation.
Even the Colomba, like all large leavened products and all leavened breakfast products, are preserved only for the living sourdough, which is refreshed and treated at least three times a day, every day of the year.
We never use any kind of preservative and emulsifier.
No white sugar is present.
Natural ingredients are carefully chosen, organic, with the shortest possible supply chain, we know the faces of all our suppliers, we have visited them and often virtuous and creative relationships are created.
